WHITE BEANS WITH SMOKED PAPRIKA SALSICCIA

ingredients

  • 300 g white beans (dry weight, soaked for 12 hours)
  • 1 leek, the white part
  • 2 carrots
  • 1 onion
  • 1/2 head of garlic
  • 1 tomato
  • 300 g Nonna Elide's smoked paprika Salsiccia
  • 1 bay leaf
  • 1 tsp paprika powder
  • Freshly ground black pepper
  • 2 tbsp olive oil
  • 1 tsp salt
  • Flat-leaf parsley, to garnish

Here's how

  • Soak the beans for 12 hours. Drain the water and rinse them.
  • Trim and peel the leek, carrots, garlic and onion.
  • Place the beans in a large pot together with the vegetables, the salsiccia, bay leaf, paprika powder, black pepper and olive oil. Cover with water and bring to the boil.
  • Lower the heat and let it simmer for 1,5 hours until the beans are soft. Skim off the foam that forms on the surface at the start of the cooking time.
  • Lift out the vegetables, blitz them with a blender or hand blender and return them to the pot. Optional: Strain the blended vegetables for a smoother consistency.
  • Season to taste with salt and let it cook for another 10 minutes.
  • Lift out the salsiccia, remove the casing and cut it into slices before serving.
  • Garnish with chopped parsley and serve with a few slices of really good bread on the side.
