PASTA CON SALSICCIA E FINOCCHIO
Creamy, fragrant and full of Italian love for fennel. In this recipe, our flavourful salsiccia mince meets fragrant fennel, fennel seeds and a splash of white wine, balanced out by creamy cream. Together with our shell-shaped Lumaconi, which catches the sauce perfectly, you get a real luxury dinner in under three quarters of an hour.
ingredients
- 2 msk Nonna Elide Extra Virgin Olivolja
- 1 fennel bulb
- 2 spring onions (or 1 small yellow onion)
- 250 g Nonna Elide Salsicciafärs Fänkål
- 2 cloves of garlic
- 1 tsk fennel seeds (whole or coarsely crushed)
- Chilli flakes to taste
- 1 dl dry white wine
- 1 dl whipping cream or cooking cream
- Fresh parsley, finely chopped
- Parmigiano Reggiano, grated
- Fine salt
- Freshly ground black pepper or pink pepper
- Nonna Elide Lumaconi (about 200–300 g)
how to do it
- Cut the fennel and onion/spring onion into thick slices. Heat the olive oil in a large frying pan over low/medium heat. Fry the fennel and onion without stirring too much for about 10 minutes until they've softened and taken on a nice colour.
- Add the Nonna Elide salsiccia fennel mince to the pan. Brown the mince for 8–10 minutes, breaking it up into smaller pieces with a wooden spoon until it has a nice, golden-brown surface.
- Add pressed (or finely chopped) garlic cloves, fennel seeds (whole or coarsely crushed) and chilli flakes. Let it fry along for a minute so the aromas are released. Season with salt and pepper, then pour in the white wine. Turn up the heat and let the wine reduce slightly. Lower the heat again, stir in the cream and let the sauce simmer together on low heat for about 15–20 minutes so it becomes really creamy and full of flavour.
- Cook the Nonna Elide Lumaconi in plenty of lightly salted water over low/medium-low heat – just let the water simmer gently so the pasta keeps its nice shape. Cook until perfectly al dente according to the instructions on the packet. Save 1 dl of the pasta water before draining the pasta.
- Toss the freshly cooked pasta straight into the frying pan with the sauce. Add a splash of the pasta water if you want the sauce extra glossy and creamy. Stir in the finely chopped parsley and plenty of grated Parmigiano Reggiano.
- Serve straight away, piping hot, and top with a little extra freshly ground pepper, grated cheese and maybe some fresh fennel fronds on top, if you like!
