CREAMY PASTA WITH CARAMELISED ONION AND SALSICCIA

All the flavour in this dish comes from time, not from ingredients. Three yellow onions are fried slowly until they turn dark, sweet and almost jam-like — it takes barely twenty minutes and it is what makes the sauce. Salsicciafärs Original brings the salt and the texture, sun-dried tomatoes a little acidity, and a teaspoon of dark soy sauce adds a depth nobody recognises but everybody notices.

ingredients

  • 400 g Nonna Elide Salsicciafärs Original
  • 1 tbsp Nonna Elide Extra Virgin Olive Oil
  • 3 yellow onions
  • 1 tbsp butter
  • 2 garlic cloves
  • 3 tbsp sun-dried tomatoes
  • 1 tsp dark soy sauce
  • 5 dl whipping cream
  • 1 dl grated parmesan
  • 1 handful fresh parsley, finely chopped
  • 400 g pasta, any shape
  • 1 dl pasta water
  • 1–2 tsp salt
  • 1 tsp freshly ground black pepper

how to make it

  • Heat the olive oil in a large pan and fry the salsicciafärs over medium-high heat until nicely coloured. Set it aside.
  • Slice the onions. Add a little more olive oil to the pan and add the onions over medium heat. Fry for about 10 minutes, stirring almost constantly — the onions should soften and sweeten, not burn.
  • Add the butter, salt and pepper, and keep stirring for another 8 minutes or so, until the onions are dark, glossy and almost jam-like.
  • Finely chop the garlic and the sun-dried tomatoes, add them to the pan and fry for a minute.
  • Return the salsicciafärs to the pan and stir.
  • Pour in the soy sauce and the cream, then add the parmesan. Let the sauce simmer for a few minutes.
  • Cook the pasta al dente. Lift it into the pan along with the pasta water and let everything simmer for a few minutes, until the sauce has thickened and coats the pasta. Season with salt and pepper.
  • Serve at once, topped with extra grated parmesan and fresh parsley.

Don't rush the onions — they are the foundation of the whole dish. Burnt, they go from sweet to bitter and there is no saving them. Keep the heat medium and stir often.
