’Nduja is an air-dried salami from Calabria, made from finely minced pork – usually belly and shoulder. Unlike sliced salami, ’nduja is soft, creamy and spreadable. Its characteristic dark red colour and heat come from generous amounts of Calabrian chilli. The flavour is rich, fermented and rounded, with a clear heat rather than traditional spiciness, which is why ’nduja is often described as hot rather than heavily spiced.

’Nduja can be eaten straight away and needs no cooking, but it's also widely used in cooking. You can spread it on toasted bread or crostini, dollop it on pizza, stir it into hot pasta or tomato sauce, use it in omelettes, scrambled eggs or frittata, or let it add extra depth to soups, stews and bread or focaccia dough. A little goes a long way – ’nduja brings colour, intensity and warmth to the dish.

Good ’nduja is recognised by its dark red colour, its finely minced but not entirely smooth texture, and its distinct, fermented salami aroma. It shouldn't taste overly oily.
